Dave Larsen’s wines are consistently well-made, remarkably affordable, and expressive of the vineyards they are sourced from. “When I first started making wines commercially,” Larsen acknowledges, “I had a good palate, I knew a good wine when I tasted it, but didn’t necessarily know how to make one. I was more drawn to forward, obvious type wines; now as my palate has matured I’m looking for more elegance and finesse, wines with more nuance. I’ve moved away from the big brutes.”

In 2004 Soos Creek’s Artist’s Series red includes 70% Cabernet Sauvignon, 22% Cabernet Franc and 8% Merlot. The grapes were sourced from Ciel du Cheval, Champoux, Dionysus and Dineen vineyards – widely separated geographically (for protection against the occasional freeze) and carefully integrated stylistically during the blending process. The wine opens with dense, fragrant, supple scents, the fruit tilting toward cassis and mulberry, the finish suggesting hints of slate. As with most Soos Creek releases, this is a wine that needs decanting and will open up over a period of many hours. The finish is detailed with mineral and fine grained tannins, resolving into flavors of lightly roasted coffee. (Only 270 cases produced.)

Paul Gregutt values these things in wine above all: typicity, specificity, clarity, elegance, polish, depth and balance. He recognizes that there are genuine flaws in some wines, and it is important to know and identify them. Wines that are too ripe, too oaky or alcoholic to the point where nuance and detail are obliterated are not going to win his praise. Price is a factor in his evaluation of any wine; a good $8 wine is much harder to make than a good $80 wine.
